Rainforest Muffins
2 cups whole wheat flour1/3 cup wheat germ2 eggs with shells (washed)1 tbs baking powder1 tbs palmoil2 tbs palm nut pulp1 cup fresh coconut2 1/2 cups papaya juice1 tsp bee pollen
1/2 cup Brazil nuts1/4 cup almonds1/4 cup walnuts1/2 cup macadamia nuts1 cup mixed dried fruits1/2 cup banana chips1 mashed banana1/4 cup nut butter of choice
Preheat oven to 350In a large bowl, mix flour, wheat germ, bee pollen and baking powder together. Add eggs, palm oil, palm nut pulp coconut, nut butter and papaya juice. In food processor, chop nuts and banana chips. Add to other mixture, mixing until well blended. Spoon into greased muffin tins or use paper muffin cups. Bake 35-40 minutes or until toothpick comes out clean.
Note: use unsalted, human-grade nuts.
